Oops! Fixing Baking Mistakes
Mistakes are just how bakers learn. Here are the most common baking oopsies, why they happen, and how to fix them next time.
My cookies spread flat!
Your butter may have been too warm or melted. Try chilling the dough in the fridge for 30 minutes before baking.
My cake sank in the middle
The oven door may have been opened too early, letting cold air rush in. Peek through the window instead until the last few minutes.
My muffins are tough
Too much mixing! Stir muffin batter just until the flour disappears. Lumpy batter is totally fine.
My frosting is runny
Add powdered sugar a spoonful at a time, or pop it in the fridge for 15 minutes.
The bottoms burned
Use a light-colored baking tray (dark trays get hotter) and bake on the middle rack.
Turn oops into WOW
Broken cake? Crumble it into a cup with frosting and berries and call it a "trifle." Cracked cookies? Make ice cream sandwiches. Bakers are inventors!
