Measuring Like a Pro
Cooking lets you add "a pinch of this." Baking is fussier! Tiny changes in measuring can turn fluffy cupcakes into hockey pucks. Here is how pros measure.
Spoon and level your flour
Donโt scoop flour straight from the bag. That packs it down and you get too much. Spoon flour into the cup, then slide the flat side of a butter knife across the top.
Pack brown sugar
Brown sugar is the opposite! Press it firmly into the cup. When you dump it out it should keep the cup shape like a sandcastle.
Liquids at eye level
Use a clear measuring jug for milk and water. Put it on the counter and bend down so your eyes are level with the line.
Handy number tricks
Memorize these and you will feel like a baking wizard:
- ๐ 3 teaspoons = 1 tablespoon
- ๐ 4 tablespoons = ยผ cup
- ๐ 16 tablespoons = 1 cup
- ๐ 2 cups = 1 pint
- ๐ 1 stick of butter = ยฝ cup
Scales are super accurate
Lots of bakers around the world weigh ingredients in grams. One cup of flour weighs about 125 grams. Weighing means every batch comes out the same!
